  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup shredded Gouda cheese

Instructions

  1. Preheat oven to 450°F (230°C). Roast the whole red bell peppers on a baking sheet for 25-30 minutes until charred. Let cool, peel skins, remove seeds, and chop.
  2. In a large pot, heat olive oil over medium heat. Sauté chopped onions until translucent (about 5 minutes).
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Stir in the chopped roasted peppers and vegetable broth. Simmer for about 10 minutes.
  5. Blend the mixture until smooth using an immersion blender or stand blender.
  6. Gradually stir in shredded Gouda cheese until melted. If desired, add heavy cream for additional richness.
