  • 2 tbsp olive oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup shredded provolone cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 4 large flour tortillas

Instructions

  1. Slice the flank steak against the grain into thin strips. Also slice the onion and bell peppers.
  2. In a bowl, mix olive oil, cumin, chili powder, salt, and pepper. Add steak strips and marinate for at least 30 minutes.
  3. Heat a skillet over medium-high heat with a tablespoon of olive oil. Sauté onions and bell peppers until tender (about 5-7 minutes).
  4. Push veggies aside in the skillet; add marinated steak strips and cook for 3-4 minutes until browned.
  5. Stir in minced garlic for the last minute of cooking; then sprinkle shredded cheese on top and cover briefly until melted.
  6. Warm tortillas and fill each with generous portions of the steak mixture. Serve immediately with optional toppings like salsa or sour cream.
