  • 2 medium carrots (diced)
  • 1 bell pepper (any color, diced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 can (14.5 oz) diced tomatoes (no-salt-added)
  • 4 cups vegetable broth (low-sodium)
  • 1 tsp fresh thyme
  • 1/4 cup fresh basil (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. On the baking sheet, toss carrots, bell pepper, onion, and garlic with olive oil; season with salt and pepper. Roast for about 25 minutes until tender.
  3. In a large pot, combine roasted vegetables with diced tomatoes and vegetable broth. Bring to a gentle simmer.
  4. Create a space in the center of the mixture and place the feta block there; drizzle with olive oil and sprinkle with thyme.
  5. Bake uncovered for about 20 minutes until feta is golden brown.
