  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

  3. Add diced sweet potatoes to the pot, mixing well to coat them in spices. Cook for about 5 minutes.
  4. Pour in coconut milk and enough vegetable broth to cover the potatoes. Bring to a gentle boil, then reduce heat and simmer uncovered for about 25 minutes or until sweet potatoes are fork-tender.
