  • 2 cups heavy cream
  • 3 cloves fresh garlic, minced
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 2 tablespoons butter, for greasing
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh thyme or parsley

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with butter.
  2. Thinly slice the potatoes using a mandoline or sharp knife.
  3. In a bowl, mix heavy cream with minced garlic, salt, pepper, and herbs.
  4. Layer half of the potato slices in the baking dish. Pour half of the cream mixture over the potatoes and sprinkle with half of the cheese. Repeat with remaining ingredients.
  5. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
