Description

This Spinach-Artichoke Tuna Noodle Casserole is a creamy, comforting dish that combines tender egg noodles with savory tuna, fresh spinach, and artichokes.   • 8 oz wide egg noodles
  • 1 (12 oz) can solid white albacore tuna, drained
  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  • 1 cup canned artichoke hearts, drained and chopped
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • 1 tsp garlic powder
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a large baking dish.
  2. Cook the egg noodles in salted boiling water until al dente according to package directions. Drain and set aside.
  3. In a large mixing bowl, combine the drained tuna, cooked noodles, spinach, artichokes, cream of mushroom soup, sour cream, garlic powder, and half of each type of cheese. Mix until well combined.
  4. Transfer the mixture into the prepared baking dish and spread evenly.
  5. Top with remaining mozzarella and Parmesan cheese (and optional breadcrumbs).
  6. Bake for 25-30 minutes or until bubbly and golden brown on top.
