  • 2 lbs beef chuck roast, cut into bite-sized cubes
  • 2 medium yellow onions, finely chopped
  • 4 cloves garlic, minced
  • 3 tbsp Hungarian paprika
  • 3 medium carrots, sliced
  • 4 medium Yukon Gold potatoes, cut into chunks
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the beef chuck roast and cut it into bite-sized cubes. In a large pot or Dutch oven over medium-high heat, brown the beef in batches until golden on all sides; set aside.
  2. In the same pot, add chopped onions and minced garlic. Sauté until softened and fragrant (about 5 minutes).
  3. Return the browned beef to the pot. Stir in the paprika, then add sliced carrots and potatoes.
  4. Pour in enough beef broth to cover all ingredients. Add bay leaves and season with salt and pepper. Bring to a gentle simmer.
  5. Cover the pot and reduce heat to low; let cook for about 2 hours or until the beef is fork-tender.
  6. Remove bay leaves before serving hot with crusty bread or noodles.
