  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 medium zucchinis, diced
  • 3 cloves garlic, minced
  • 1 cup green beans, trimmed and cut into pieces
  • 1 can (15 oz) fire-roasted diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup ditalini pasta (or small shells)
  • 1 tsp Italian seasoning
  • 2 cups fresh spinach, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the onion and carrots for about 5 minutes until the onion is translucent.
  2. Add garlic and zucchinis; cook for an additional 5 minutes until slightly softened.
  3. Stir in green beans, diced tomatoes with juice, and vegetable broth. Bring to a gentle boil.
  4. Mix in cannellini beans and Italian seasoning; reduce heat and simmer for about 15 minutes.
  5. Add pasta and cook until tender but al dente (approximately 8 minutes).
