  • 34 lb beef roast (chuck or sirloin)
  • 1 cup dried unsweetened cranberries
  • 1/2 cup balsamic vinegar (aged)
  • 2 tbsp fresh rosemary, chopped
  • 4 garlic cloves, minced
  • 1 medium onion, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C). Season the beef roast with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast until browned on all sides, about 8-10 minutes. Remove from skillet.
  3. In the same skillet, sauté chopped onions and minced garlic until translucent, about 4 minutes.
  4. In a bowl, mix dried cranberries, balsamic vinegar, rosemary, salt, and pepper.
  5. Place the seared roast back in the skillet or an oven-safe baking dish. Pour the cranberry mixture over it and cover tightly with foil.
  6. Roast for 1.5 to 2 hours until internal temperature reaches at least 145°F (63°C). Let rest for 10 minutes before slicing.
