  • 4 cups fresh corn kernels (about 4 ears of corn)
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup finely chopped red onion
  • 1/4 cup mayonnaise
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Prepare the corn by removing husks and silks. Grill or boil until tender (about 5-7 minutes).
  2. Cut the kernels off the cob into a large mixing bowl.
  3. Add chopped red onion and cilantro to the corn and mix well.
