- ¾ cup granulated sugar
- ½ tsp baking powder
- 1 tsp ground cinnamon
- 2 large eggs (room temperature)
- ⅓ cup vegetable oil
- For Cinnamon Swirl: ⅓ cup brown sugar
- 1 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease two mini loaf pans or line them with parchment paper.
- In a bowl, whisk together flour, baking powder, granulated sugar, and cinnamon.
- In another bowl, mix pumpkin puree, eggs, and vegetable oil until smooth. Gently fold into dry ingredients until just combined.
- For the cinnamon filling, combine brown sugar and cinnamon in a small bowl.
- Pour half the batter into each pan; sprinkle half the cinnamon filling on top. Swirl gently with a knife; add remaining batter on top.
- Bake for 45-50 minutes until a toothpick comes out clean. Cool for 10 minutes before transferring to wire racks.
