Instructions

  3. In another bowl, combine pumpkin puree, sugar, oil, eggs, and vanilla until smooth.
  4. Gradually mix the dry ingredients into the wet mixture until just combined—do not overmix.
  5. In a separate bowl, beat softened cream cheese with a tablespoon of sugar until smooth.
  6. Fill each muffin cup halfway with batter, add one tablespoon of cream cheese filling, then top with remaining batter.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean. Cool slightly before serving.
