Ingredients
- 9 lasagna noodles
- 2 cups mixed seasonal vegetables (zucchini, bell peppers, spinach)
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup freshly grated Parmesan cheese
- 3 cups marinara sauce
- 1 tablespoon olive oil

Instructions
