  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • ¾ cup fresh apple cider
  • For the Frosting: 1 cup powdered sugar
  • ¼ cup brown sugar
  • ½ cup unsalted butter, softened
  • 1 tbsp fresh apple cider

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, and granulated sugar.
  3. In a separate large bowl, beat melted butter, eggs, and apple cider until smooth. Gradually mix in the dry ingredients until just combined.
  4. Fill each muffin cup two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  5. While the cupcakes cool, beat softened butter for the frosting until creamy. Gradually add powdered sugar and brown sugar along with apple cider until smooth.
  6. Once cooled completely, generously frost each cupcake and serve.
