  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 medium zucchini, sliced into half-moons
  • 1 cup green beans, trimmed and chopped
  • 2 cups fresh spinach or kale
  • 1 can (14 oz) diced tomatoes with juice
  • 4 cups low-sodium vegetable broth
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 cup ditalini pasta (or any small pasta shape)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for about five minutes until softened. Stir in garlic for one more minute.
  2. Add zucchini and green beans; cook for five minutes until slightly softened.
  3. Stir in diced tomatoes and vegetable broth; bring to a simmer over medium-high heat.
  4. Season with oregano, basil, salt, and pepper; reduce heat to low and cover partially. Simmer for about twenty minutes.
  5. Add rinsed cannellini beans and pasta; cook until pasta is tender (around ten minutes).
  6. Stir in fresh spinach or kale until wilted; adjust seasoning before serving hot.
