- 1 medium yellow onion, diced
- 2 medium carrots, diced
- 2 stalks celery, chopped

- 1 medium zucchini, sliced into half-moons
- 1 cup green beans, trimmed and chopped
- 2 cups fresh spinach or kale
- 1 can (14 oz) diced tomatoes with juice
- 4 cups low-sodium vegetable broth
- 1 can (15 oz) cannellini beans, rinsed and drained
- 1 cup ditalini pasta (or any small pasta shape)
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for about five minutes until softened. Stir in garlic for one more minute.
- Add zucchini and green beans; cook for five minutes until slightly softened.
- Stir in diced tomatoes and vegetable broth; bring to a simmer over medium-high heat.
- Season with oregano, basil, salt, and pepper; reduce heat to low and cover partially. Simmer for about twenty minutes.
- Add rinsed cannellini beans and pasta; cook until pasta is tender (around ten minutes).
- Stir in fresh spinach or kale until wilted; adjust seasoning before serving hot.
