  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, peeled and diced
  • 1 bell pepper, diced (any color)
  • ¼ cup red onion, thinly sliced
  • ½ cup black olives, sliced
  • ½ cup shredded Parmesan cheese
  • ¾ cup Italian dressing (homemade or store-bought)
  • 1 tablespoon fresh basil, chopped (optional)
  • Sliced pepperoncini peppers (to taste)

Instructions

  1. Cook the rotini pasta according to package instructions in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine halved cherry tomatoes, diced cucumber, diced bell pepper, and sliced red onion.
  3. Add the sliced black olives and shredded Parmesan cheese to the vegetable mixture.
  4. In a separate bowl, mix the Italian dressing with chopped basil (if using). Pour over the pasta salad and toss until well coated.
  5. If desired, add sliced pepperoncini peppers and mix gently.
  6. Cover the salad with plastic wrap or transfer it to an airtight container. Refrigerate for at least one hour before serving.
