  • 8 oz rice noodles
  • 2 tbsp unflavored gelatin powder
  • 1 cup vegetable oil (for frying)
  • 1 large bell pepper, diced
  • 1 medium carrot, grated
  • 1 small cucumber, diced
  • 3 tbsp lime juice
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tsp chili flakes
  • 12 round wonton wrappers

Instructions

  1. Cook rice noodles according to package instructions. Drain and cool. Dissolve gelatin in warm water and mix it into the cooled noodles until evenly coated.
  2. Preheat oven to 375°F (190°C). Grease a muffin tin with vegetable oil. Press wonton wrappers into muffin cups and bake for 8-10 minutes until golden brown.
  3. In a bowl, combine diced bell pepper, grated carrot, and diced cucumber with the prepared noodles.
  4. Whisk lime juice, fish sauce, sugar, and chili flakes in a separate bowl. Pour over noodle mixture and toss gently.
  5. Fill each baked wonton cup with the salad mixture and serve immediately.
