- 8 oz rice noodles
- 2 tbsp unflavored gelatin powder
- 1 cup vegetable oil (for frying)
- 1 large bell pepper, diced
- 1 medium carrot, grated
- 1 small cucumber, diced
- 3 tbsp lime juice
- 2 tbsp fish sauce
- 1 tbsp sugar
- 1 tsp chili flakes
- 12 round wonton wrappers
Instructions
- Cook rice noodles according to package instructions. Drain and cool. Dissolve gelatin in warm water and mix it into the cooled noodles until evenly coated.
- Preheat oven to 375°F (190°C). Grease a muffin tin with vegetable oil. Press wonton wrappers into muffin cups and bake for 8-10 minutes until golden brown.
- In a bowl, combine diced bell pepper, grated carrot, and diced cucumber with the prepared noodles.
- Whisk lime juice, fish sauce, sugar, and chili flakes in a separate bowl. Pour over noodle mixture and toss gently.
- Fill each baked wonton cup with the salad mixture and serve immediately.
