  • 8 oz (225g) pasta (penne or fusilli)
  • 1 pint (300g) cherry tomatoes, halved
  • 8 oz (225g) fresh mozzarella, torn into bite-sized pieces
  • 1 cup (30g) fresh basil leaves, chopped
  • 2 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine cherry tomatoes and chopped basil.
  3. Add the mozzarella to the bowl.
  4. Once cooled, add the pasta to the mixing bowl and drizzle with olive oil and balsamic vinegar.
  5. Season with salt and pepper, then toss gently to combine.
  6. Chill in the refrigerator for 15-30 minutes before serving.
