- 1 pint (300g) cherry tomatoes, halved
- 8 oz (225g) fresh mozzarella, torn into bite-sized pieces
- 1 cup (30g) fresh basil leaves, chopped
- 2 tbsp balsamic vinegar
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
- In a large mixing bowl, combine cherry tomatoes and chopped basil.
- Add the mozzarella to the bowl.
- Once cooled, add the pasta to the mixing bowl and drizzle with olive oil and balsamic vinegar.
- Season with salt and pepper, then toss gently to combine.
- Chill in the refrigerator for 15-30 minutes before serving.
