  • 1 cup canned pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 large eggs (room temperature)
  • 1/2 cup vegetable oil
  • 4 oz cream cheese (softened)
  • 3 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, sugars, baking powder, cinnamon, and nutmeg.
  3. In another bowl, mix pumpkin, eggs, and oil until smooth. Combine with dry ingredients until just mixed.
  4. In a small bowl, blend additional brown sugar and cinnamon. Layer half the batter into the pan, sprinkle half the filling, add remaining batter and top with rest of filling. Swirl gently.
  5. Bake for 55-65 minutes until a toothpick comes out clean. Cool before glazing.
