- 1 cup canned pumpkin puree
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 2 large eggs (room temperature)
- 1/2 cup vegetable oil
- 4 oz cream cheese (softened)
- 3 tbsp milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, sugars, baking powder, cinnamon, and nutmeg.
- In another bowl, mix pumpkin, eggs, and oil until smooth. Combine with dry ingredients until just mixed.
- In a small bowl, blend additional brown sugar and cinnamon. Layer half the batter into the pan, sprinkle half the filling, add remaining batter and top with rest of filling. Swirl gently.
- Bake for 55-65 minutes until a toothpick comes out clean. Cool before glazing.
