  • 2 salmon fillets (6 oz each)
  • 1 cup stone-ground corn grits
  • 2 cups water or chicken broth
  • 2 tsp Creole seasoning
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 green onions (chopped)
  • 2 tbsp freshly squeezed lemon juice

Instructions

  2. Cook the Salmon: Season salmon fillets with Creole seasoning. In a skillet, melt 2 tbsp of butter over medium-high heat. Add salmon skin-side down and cook for about 6 minutes per side until cooked through.
  3. Make it Creamy: Stir in heavy cream and remaining butter into cooked grits until smooth. Season with salt to taste.
  4. Prepare the Sauce: In the same skillet, sauté chopped green onions for about 2 minutes. Add lemon juice and stir well.
  5. Plate It Up: Spoon creamy grits onto plates, top with salmon fillets, and drizzle with green onion sauce before serving.
