  • ½ cup unsalted butter, chilled and cubed
  • 2 tbsp granulated sugar (plus extra for sprinkling)
  • ¼ tsp salt
  • 34 tbsp cold water
  • 3 ripe pears (Bosc or Anjou), peeled and sliced
  • ½ cup sliced almonds

Instructions

  1. For the dough, mix flour, sugar, and salt in a bowl. Cut in butter until crumbly. Gradually add cold water until dough holds together; form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  2. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  3. Roll out the chilled dough on a floured surface to about 12 inches in diameter and transfer it to the prepared baking sheet.
  4. Mix sliced pears with sugar and half of the almonds; let sit for 10 minutes.
  5. Arrange pear mixture on the dough center, leaving a 2-inch border. Fold edges over fruit, sprinkle remaining almonds on top.
  6. Bake for 35-40 minutes until golden brown and bubbly. Serve warm with ice cream or whipped cream.
