- 1 cup crumbled feta cheese
- 1 cup sun-dried tomatoes (packed in oil)
- 6 cups day-old crusty bread (cubed)
- 6 large eggs
- 2 cups whole milk
- Salt and pepper to taste
- 1 tbsp olive oil (for sautéing)
Instructions
- Preheat oven to 350°F (175°C) and grease a large baking dish.
- In a skillet over medium heat, warm olive oil and sauté spinach until wilted (about 2-3 minutes). Stir in sun-dried tomatoes, then remove from heat.
- In a large bowl, combine cubed bread with crumbled feta.
- In another bowl, whisk together eggs, milk, salt, and pepper.
- Layer half of the bread mixture in the baking dish. Add sautéed spinach and tomato mixture on top, followed by half of the egg-milk mixture. Repeat layers with remaining ingredients.
- Cover with foil and bake for 30 minutes; uncover and bake an additional 15-20 minutes until golden brown.
