  • 2 medium eggplants (sliced into 1/2-inch rounds)
  • 4 cups fresh arugula
  • 3 cups marinara sauce
  • 1.5 cups whole milk ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup fresh basil leaves (chopped)
  • 1 can (14 oz) diced tomatoes

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Salt the eggplant slices and let them sit for 20 minutes to draw out moisture.
  3. Sauté arugula in olive oil until wilted; set aside.
  4. In a baking dish, layer marinara sauce, eggplant, ricotta, sautéed arugula, mozzarella, and more marinara. Repeat layers and finish with mozzarella on top.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until golden brown. Let rest for 10 minutes before serving.
