  • 8 oz fettuccine pasta
  • 1 lb large shrimp, peeled and deveined
  • 1 cup heavy cream
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in boiling salted water until al dente. Drain and set aside, reserving 1/2 cup pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook until pink and opaque (about 3-4 minutes). Remove from skillet.
  3. In the same skillet, sauté minced garlic for 1 minute. Add heavy cream and lemon juice; simmer for 5 minutes.
  4. Toss cooked fettuccine into the sauce, adding reserved pasta water gradually until desired consistency is reached.
  5. Stir in Parmesan cheese until melted and well combined. Adjust seasoning if needed.
  6. Serve warm with additional Parmesan or lemon zest as garnish.
