  • 1 lb pork tenderloin, diced
  • 2 cups cooked jasmine rice (preferably day-old)
  • 1 cup carrots, diced
  • 1 cup green peas (fresh or frozen)
  • 2 large eggs
  • 4 green onions, chopped
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil

Instructions

  1. Cook jasmine rice according to the package instructions and let it cool.
  2. In a large skillet or wok over medium-high heat, sauté the diced pork in a bit of oil until browned (5-7 minutes). Remove from pan.
  3. Scramble the eggs in the same skillet for about 2 minutes until fully cooked.
  4. Stir-fry the carrots and peas together for 3-4 minutes until tender yet crisp.
  5. Return the pork to the skillet along with cooled rice. Add soy sauce and sesame oil; stir well and cook for an additional 3-4 minutes until heated through.
  6. Serve hot, garnished with chopped green onions.
