Ingredients
- 3 boneless, skinless chicken breasts (approx. 1.5 lbs)
- 1 cup long-grain white rice
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 medium onion, finely chopped
- 2 tsp garlic powder
- 2 cups low-sodium chicken broth
- 2 tsp ground cumin
- 1 packet taco seasoning (about 1 oz)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
- Season the chicken breasts with salt, pepper, and half of the taco seasoning.
- In a skillet over medium heat, sauté the onions and bell peppers until soft (about 5 minutes), then add them to the baking dish.
- In a bowl, combine rice, remaining taco seasoning, and chicken broth; pour over the vegetable mix in the dish.
- Layer seasoned chicken breasts on top of the rice mixture. Cover tightly with aluminum foil.
