- 2 cups Fresh Spinach, chopped
- 1 can (14 oz or 400g) Canned Artichokes, drained and chopped
- 8 oz (226g) Cream Cheese, softened
- ½ cup (120ml) Sour Cream
- 1 cup (100g) Shredded Cheese (Mozzarella & Parmesan blend)
- 12 pieces Puff Pastry Cups
- 1 tsp Garlic Powder
- ½ tsp Salt
- ¼ tsp Pepper
- Olive Oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté the chopped spinach until wilted, then remove from heat and let cool.
- In a mixing bowl, combine cream cheese, sour cream, chopped spinach, drained artichokes, shredded cheese, garlic powder, salt, and pepper until well mixed.
- Roll out the puff pastry on a floured surface and cut into squares to fit muffin tins. Press the squares into the muffin tins to form cups.
- Fill each pastry cup with the spinach-artichoke mixture until just below the top edge.
- Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving warm.
