  • 1 cup sweetened shredded coconut (plus extra for rolling)
  • 1 can (14 oz) sweetened condensed milk
  • 1 tsp pure vanilla extract
  • 1/2 cup chopped almonds or walnuts (optional)

Instructions

  1. 1. Finely chop the fresh pineapple and drain excess juice.
  2. 2. In a large mixing bowl, combine chopped pineapple, shredded coconut, condensed milk, and vanilla extract. Mix until well combined.
  3. 3. Roll small portions of the mixture into bite-sized balls (about 1 inch in diameter). If using nuts, press some into each ball before rolling.
  4. 4. Place the balls on a parchment-lined baking sheet and refrigerate for at least one hour to firm up.
