  • 8 oz fettuccine or linguine
  • 2 tbsp olive oil
  • 8 oz fresh cremini or button mushrooms, sliced
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 2 tbsp honey
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in boiling salted water until al dente (about 8-10 minutes). Reserve 1/2 cup pasta water before draining.
  2. In a skillet over medium heat, add olive oil and sauté sliced mushrooms until golden brown and crispy (5-7 minutes). Remove and set aside.
  3. In the same skillet, melt butter over low heat. Add minced garlic and rosemary; sauté for 2 minutes until fragrant. Stir in honey until combined.
  4. Toss the drained pasta into the skillet with the sauce, adding reserved pasta water gradually until desired consistency is reached.
  5. Remove from heat and mix in grated Parmesan cheese. Season with salt and pepper. Top with crispy mushrooms before serving.
