  • 2 lbs beef chuck roast, cut into 2-inch chunks
  • 1 can (14 oz) full-fat coconut milk
  • 3 tbsp red or yellow curry paste (adjust for heat)
  • 1 tbsp fresh ginger, grated
  • 1 large yellow onion, chopped
  • 3 medium russet potatoes, cut into fries
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Cooked jasmine or basmati rice for serving

Instructions

  1. Season beef chunks with salt and pepper. Sauté chopped onions in a skillet over medium heat until translucent (about 5 minutes). Add grated ginger and curry paste; cook for another 2 minutes.
  2. In a slow cooker, combine sautéed mixture, beef chunks, and coconut milk. Stir well.
  3. Cover and cook on low for 8 hours, until beef is fork-tender.
  4. Preheat oven to 425°F (220°C). Toss potato fries in olive oil, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes until golden brown, flipping halfway through.
  5. Serve the curry over rice with crispy fries on the side.
