- 2 lbs beef chuck roast, cut into 2-inch chunks
- 1 can (14 oz) full-fat coconut milk
- 3 tbsp red or yellow curry paste (adjust for heat)
- 1 tbsp fresh ginger, grated
- 1 large yellow onion, chopped
- 3 medium russet potatoes, cut into fries
- 2 tbsp olive oil
- Salt and pepper to taste
- Cooked jasmine or basmati rice for serving
Instructions
- Season beef chunks with salt and pepper. Sauté chopped onions in a skillet over medium heat until translucent (about 5 minutes). Add grated ginger and curry paste; cook for another 2 minutes.
- In a slow cooker, combine sautéed mixture, beef chunks, and coconut milk. Stir well.
- Cover and cook on low for 8 hours, until beef is fork-tender.
- Preheat oven to 425°F (220°C). Toss potato fries in olive oil, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes until golden brown, flipping halfway through.
