  • 34 medium sweet potatoes (about 2 lbs)
  • 1/2 cup pure maple syrup
  • 1/4 cup light brown sugar
  • 1 cup chopped pecans
  • 1 tsp ground cinnamon
  • 1/4 cup unsalted butter (melted)

Instructions

  1. Preheat oven to 400°F (200°C). Wash, peel, and chop sweet potatoes. Boil in salted water for about 15 minutes until tender.
  2. Drain and transfer sweet potatoes to a mixing bowl. Add maple syrup, brown sugar, cinnamon, and melted butter. Mash until smooth.
  3. In another bowl, mix chopped pecans with melted butter and a sprinkle of brown sugar.
