  • 12 jumbo pasta shells
  • 2 cups fresh spinach, chopped
  • 1 cup cremini mushrooms, finely chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 2 cups marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C). Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant. Add mushrooms and spinach; cook until softened. Season with Italian seasoning.
  3. In a bowl, combine sautéed vegetables with ricotta, half the mozzarella, and Parmesan. Mix until well combined.
  4. Stuff each shell with the filling and place in a greased baking dish. Pour marinara sauce over the shells and sprinkle remaining mozzarella on top.
  5. Cover with foil and bake for 25 minutes; then remove foil and bake for an additional 10-15 minutes until golden and bubbly.
