  • 2 lbs sweet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup panko breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a medium-sized baking dish.
  2. In a mixing bowl, whisk together the heavy cream, minced garlic, thyme, salt, and pepper.
  3. Layer half of the sweet potato slices in the baking dish. Pour half of the cream mixture over them. Repeat with another layer of sweet potatoes and the remaining cream.
  4. Sprinkle shredded cheddar cheese on top and gently press down.
  5. Top with panko breadcrumbs for added crunch.
  6. Bake for 45 minutes to an hour until golden brown and bubbly.
