Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
- In a separate bowl, whisk the all-purpose flour and lemon zest together. Gradually add this mixture to the butter-sugar blend while mixing until fully combined.
- Roll the dough out on a lightly floured surface to about a quarter-inch thickness. Cut into desired shapes.
- Place the shaped cookies on the prepared baking sheets and bake for 12-15 minutes or until edges are lightly golden. Allow to cool on wire racks.
- Melt dark chocolate chips in a microwave-safe bowl or double boiler. Dip half of each cooled cookie into the melted chocolate and return them to parchment paper until set.
