  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 cup brown sugar
  • 3/4 cup molasses
  • 1 large egg
  • Zest of 1 orange or lemon

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, whisk together the gluten-free flour, ginger, cinnamon, baking soda, and brown sugar until well combined.
  3. In another bowl, mix molasses, egg, and orange or lemon zest until smooth. Pour into the dry ingredients and stir until a dough forms. If sticky, add more flour as needed.
  4. Scoop tablespoon-sized balls of dough onto prepared baking sheets, leaving space between each cookie.
  5. Bake for 10-12 minutes until edges are firm but centers remain soft. Cool on baking sheets before transferring to wire racks.
