  • 4 medium bell peppers (red, orange, yellow)
  • 1 lb lean ground beef or turkey
  • 1 cup cooked rice
  • 1 cup shredded cheese (mozzarella & cheddar blend)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • ½ cup sour cream (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Cut the tops off the bell peppers and remove seeds. Set aside.
  3. In a skillet over medium heat, brown the ground meat. Drain excess fat.
  4. Stir in cooked rice, spices, and half of the shredded cheese until well combined.
  5. Fill each bell pepper with the meat mixture and place them upright in the baking dish.
  6. Cover with foil and bake for about 25 minutes. Remove foil, sprinkle remaining cheese on top, and bake for an additional 10 minutes until bubbly and golden.
  7. Serve hot, topped with a dollop of sour cream.
