  • 1 medium butternut squash (about 2 lbs)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1/2 cup heavy cream (or coconut milk for a vegan option)
  • 1/4 tsp freshly grated nutmeg
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 slices sourdough bread
  • 4 oz cheddar cheese or mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C). Cut the butternut squash in half, scoop out seeds, and place cut side down on a baking sheet lined with parchment paper. Roast for about 45 minutes until tender.
  2. In a large pot over medium heat, add olive oil and sauté diced onion until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Scoop the roasted squash flesh into the pot with onions and garlic. Add vegetable broth and grated nutmeg. Stir well.
  4. Bring the mixture to a boil, reduce heat, and simmer for 15 minutes. Blend until smooth using an immersion blender or standard blender. Gradually stir in heavy cream.
  5. For grilled cheese ghosts, butter one side of each slice of bread, place cheese between two slices (buttered sides facing out), and grill on medium heat until golden brown and cheese is melted.
  6. Serve soup in bowls topped with ghost-shaped grilled cheese.
