- 1 cup green or brown lentils
- 1 medium yellow onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp dried oregano
- 1/2 cup panko breadcrumbs
- 1 large egg
- Salt and pepper to taste
- 1 cup full-fat Greek yogurt
- 1/2 cucumber, grated (excess moisture removed)
- Juice of 1 lemon
- 2 tbsp fresh dill or mint
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Rinse lentils under cold water. Cook in a pot with three cups of water until tender, about 20 minutes. Drain and cool.
- In a large bowl, combine cooked lentils, onion, garlic, parsley, oregano, breadcrumbs, egg, salt, and pepper. Mix well.
- Shape the mixture into small balls (about one inch in diameter) and place on the prepared baking sheet.
- Bake for 25-30 minutes until golden brown, flipping halfway through.
- While baking, mix yogurt, cucumber, lemon juice, dill or mint in a bowl to prepare tzatziki sauce.
- Serve warm meatballs with tzatziki for dipping.
