  • 1 cup green or brown lentils
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp dried oregano
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • Salt and pepper to taste
  • 1 cup full-fat Greek yogurt
  • 1/2 cucumber, grated (excess moisture removed)
  • Juice of 1 lemon
  • 2 tbsp fresh dill or mint

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Rinse lentils under cold water. Cook in a pot with three cups of water until tender, about 20 minutes. Drain and cool.
  3. In a large bowl, combine cooked lentils, onion, garlic, parsley, oregano, breadcrumbs, egg, salt, and pepper. Mix well.
  4. Shape the mixture into small balls (about one inch in diameter) and place on the prepared baking sheet.
  5. Bake for 25-30 minutes until golden brown, flipping halfway through.
  6. While baking, mix yogurt, cucumber, lemon juice, dill or mint in a bowl to prepare tzatziki sauce.
  7. Serve warm meatballs with tzatziki for dipping.
