Ingredients
Scale
- 1 lb boneless, skinless chicken thighs
- 8 oz fresh mushrooms (cremini or button), sliced
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tbsp olive oil
- 1 tsp fresh thyme (or ½ tsp dried thyme)
- Salt and pepper to taste
Instructions
- 1. Prepare the ingredients: wash and chop the vegetables—diced carrots and celery, sliced mushrooms, and minced garlic.
- 2. In a large pot over medium heat, add olive oil. Once hot, add the chicken thighs seasoned with salt and pepper. Cook until browned on all sides (about 5-7 minutes). Remove from the pot and set aside.
- 3. In the same pot, add more olive oil if needed. Add minced garlic, diced carrots, chopped celery, and sliced mushrooms. Sauté until softened (about 3-4 minutes).
- 4. Return the cooked chicken to the pot along with thyme. Pour in enough chicken broth to cover everything (approximately 4 cups). Bring to a boil then reduce to a simmer.
- 5. Let simmer for about 10-12 minutes until flavors meld together and chicken is thoroughly cooked. Adjust seasoning as needed before serving.
