  • 8 oz fresh mushrooms (cremini or button), sliced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. 1. Prepare the ingredients: wash and chop the vegetables—diced carrots and celery, sliced mushrooms, and minced garlic.
  2. 2. In a large pot over medium heat, add olive oil. Once hot, add the chicken thighs seasoned with salt and pepper. Cook until browned on all sides (about 5-7 minutes). Remove from the pot and set aside.
  3. 3. In the same pot, add more olive oil if needed. Add minced garlic, diced carrots, chopped celery, and sliced mushrooms. Sauté until softened (about 3-4 minutes).
  4. 4. Return the cooked chicken to the pot along with thyme. Pour in enough chicken broth to cover everything (approximately 4 cups). Bring to a boil then reduce to a simmer.
  5. 5. Let simmer for about 10-12 minutes until flavors meld together and chicken is thoroughly cooked. Adjust seasoning as needed before serving.
