  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • 1 cup fresh raspberries (or thawed frozen raspberries)

Instructions

  1. Preheat the oven to 325°F (160°C) and line a heart-shaped baking pan with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form a crust.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar, then mix in sour cream, vanilla extract, and lemon juice until creamy.
  4. Gently fold half of the raspberries into the cheesecake mixture.
  5. Pour the filling over the crust and bake for 30-35 minutes until set but slightly jiggly in the center. Let cool completely before refrigerating for at least four hours.
  6. Carefully remove from the pan using parchment edges and cut into heart shapes. Garnish with remaining raspberries.
