- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 1 cup sour cream
- 1 tsp vanilla extract
- 2 tbsp lemon juice
- 1 cup fresh raspberries (or thawed frozen raspberries)
Instructions
- Preheat the oven to 325°F (160°C) and line a heart-shaped baking pan with parchment paper.
- In a medium bowl, mix graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form a crust.
- In a large bowl, beat softened cream cheese until smooth. Gradually add sugar, then mix in sour cream, vanilla extract, and lemon juice until creamy.
- Gently fold half of the raspberries into the cheesecake mixture.
- Pour the filling over the crust and bake for 30-35 minutes until set but slightly jiggly in the center. Let cool completely before refrigerating for at least four hours.
- Carefully remove from the pan using parchment edges and cut into heart shapes. Garnish with remaining raspberries.
