  • 2 juicy lemons (juiced)
  • 2 tablespoons chia seeds
  • 4 cups filtered water (divided)
  • 2 tablespoons honey or agave syrup (optional)

Instructions

  1. Rinse raspberries and lemons. Juice lemons into a bowl, discarding seeds.
  2. In a separate bowl, mix 2 tablespoons of chia seeds with 2 cups of filtered water. Stir and let sit for 10 minutes until gel-like.
  3. Blend the remaining raspberries with 1 cup of water until smooth, then strain to remove pulp.
  4. In a large pitcher, combine lemon juice, raspberry puree, and chia mixture. Add additional water for desired consistency.
  5. Sweeten with honey or agave syrup if desired, stirring well.
  6. Chill for at least an hour before serving over ice with garnishes.
