- 4 medium orange bell peppers
- 1 lb lean ground beef or turkey
- 1 cup cooked rice
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup shredded cheddar or Monterey Jack cheese
Instructions
- Preheat the oven to 375°F (190°C). Cut off the tops of the bell peppers and remove seeds. Carve jack-o'-lantern faces into the front.
- In a skillet over medium heat, heat 1 tablespoon olive oil. Sauté onion until translucent, add garlic, and cook for an additional minute.
- Add ground beef or turkey; cook until browned. Stir in cooked rice and tomato sauce, then season with salt and pepper. Simmer for 5 minutes.
- Stuff each pepper with the filling and place in a baking dish lined with parchment paper. Top with cheese.
- Cover with foil and bake for 25 minutes; uncover and bake for an additional 10 minutes until cheese is bubbly.
