  • 4 slices of sourdough or whole grain bread
  • 1 cup sharp cheddar cheese, grated
  • 1 cup mozzarella cheese, grated
  • 2 tablespoons unsalted butter (for grilling)
  • 4 cups tomatoes (fresh or canned), chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/4 cup fresh basil leaves

Instructions

  1. In a pot over medium heat, melt 1 tablespoon of butter. Sauté the chopped onion until translucent. Add minced garlic and cook until fragrant.
  2. Stir in the chopped tomatoes, salt, pepper, and sugar. Simmer for about 20 minutes.
