- 8 soft flour tortillas
- 1 cup full-fat sour cream
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 2 cups low-sodium chicken broth
- 2 tbsp cornstarch
- 2 tsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
- In a skillet, heat olive oil over medium heat. Sauté chopped onions until translucent. Add seasoned chicken breasts and cook for about 6-7 minutes per side until no longer pink. Shred the chicken and set aside.
