  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 soft flour tortillas
  • 1 cup full-fat sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cups low-sodium chicken broth
  • 2 tbsp cornstarch
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onions until translucent. Add seasoned chicken breasts and cook for about 6-7 minutes per side until no longer pink. Shred the chicken and set aside.
