  • 4 lbs pork shoulder
  • 6 cloves garlic, minced
  • 2 large yellow onions, chopped
  • 1/2 cup apple cider vinegar
  • 1/4 cup Dijon mustard
  • 2 tsp sweet paprika
  • 1 tsp caraway seeds, toasted
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix garlic, onions, apple cider vinegar, Dijon mustard, paprika, and caraway seeds.
  2. Place pork shoulder in a resealable bag or bowl and pour the marinade over it. Seal and refrigerate for at least four hours or overnight.
  3. Preheat the oven to 325°F (160°C).
  4. Remove pork from marinade and place in a roasting pan. Pour remaining marinade on top and cover with aluminum foil.
  5. Roast for about three hours or until the internal temperature reaches at least 145°F (63°C). Let it rest for 15 minutes before slicing.
