- 1 (32 oz) bag frozen tater tots
- 2 cups short pasta (penne or rotini)
- 1 cup shredded cheddar cheese
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- ¼ cup ketchup
- 2 tbsp mustard
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
- Add the chopped onion and minced garlic; sauté for about 3-4 minutes until the onions are translucent.
- Stir in uncooked pasta, beef broth, ketchup, mustard, salt, and pepper. Bring to a boil then reduce heat to low. Cover and simmer for 10-12 minutes until pasta is tender.
- Gently fold in frozen tater tots and allow them to heat through for about 5 minutes.
