  • 1 lb lean ground beef
  • 1 cup uncooked long-grain rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/2 cup ketchup (divided)
  • 1 tbsp Worcestershire sauce
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a baking pan with nonstick spray.
  2. In a large bowl, mix ground beef, rice, onion, garlic, egg, and half of the ketchup. Season with salt and pepper; combine well.
  3. Form mixture into golf ball-sized meatballs and place in the prepared baking pan.
  4. In another bowl, mix remaining ketchup with Worcestershire sauce and lemon juice for the zesty sauce.
  5. Pour the sauce over meatballs and bake for about 45 minutes or until internal temperature reaches 160°F (70°C).
  6. Let cool slightly before serving; drizzle with extra sauce if desired.
