Description

A dense, flavorful bread combining the sweetness of ripe bananas with the moisture of zucchini and the crunch of toasted walnuts.


Ingredients

  • 3 ripe bananas, mashed
  • 1.5 cups grated zucchini, squeezed dry
  • 1/2 cup melted coconut oil or vegetable oil
  • 2 large eggs
  • 3/4 cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F and grease a 9×5 inch loaf pan.
  2. Mash bananas until smooth in a large mixing bowl.
  3. Stir in zucchini, brown sugar, oil, and eggs.
  4. Sift flour, cinnamon, baking soda, and salt into the wet mixture.
  5. Fold in chopped walnuts gently.
  6. Pour into pan and bake for 55-65 minutes until a toothpick comes out clean.
