- 3 ripe bananas, mashed
- 1.5 cups grated zucchini, squeezed dry
- 1/2 cup melted coconut oil or vegetable oil
- 2 large eggs
- 3/4 cup brown sugar
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 cup chopped walnuts
Instructions
- Preheat oven to 350°F and grease a 9×5 inch loaf pan.
- Mash bananas until smooth in a large mixing bowl.
- Stir in zucchini, brown sugar, oil, and eggs.
- Sift flour, cinnamon, baking soda, and salt into the wet mixture.
- Fold in chopped walnuts gently.
- Pour into pan and bake for 55-65 minutes until a toothpick comes out clean.
