- 4 salmon fillets (6oz each)
- 2 cups broccoli florets, divided (1 cup for pesto, 1 cup for roasting)
- 1 cup fresh basil leaves
- 1/3 cup grated Parmesan cheese
- 1/2 cup extra virgin olive oil
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a food processor, blend 1 cup broccoli, basil, parmesan, garlic, and olive oil until a coarse pesto forms.
- Place salmon fillets on the baking sheet and season lightly with salt and pepper.
- Spread a generous layer of broccoli pesto over each salmon fillet.
- Arrange the remaining broccoli florets around the salmon, tossing them in olive oil and salt.
- Bake for 12-15 minutes until salmon is opaque and broccoli is slightly charred.
- Drizzle with fresh lemon juice before serving.
