- 1.5 cups graham cracker crumbs
- 6 tbsp melted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup heavy cream
- 1 cup fresh peaches, diced
- 1 cup mixed summer berries
- 1/2 cup salted caramel sauce
- 1 tbsp lemon juice
Instructions
- Press graham crumbs and melted butter into a 9-inch springform pan.
- Beat cream cheese and sugar until smooth.
- Mix in eggs one at a time on low speed.
- Stir in heavy cream until incorporated.
- Simmer peaches, berries, and lemon juice until thickened.
- Pour batter into pan, dollop caramel and fruit mixture on top, and swirl with a knife.
- Bake in a water bath at 325°F for 60 minutes until edges are set.
- Cool in the oven with the door cracked for 1 hour, then refrigerate overnight.
